I have problems understanding your question. If you have a date field in your model, then $this->Form->input('date') should result in a day select box, a month select box and a year select box. If you have a datetime field, then it should also result in hour/minute/second select boxes.

You can also create your own select boxes using $this->Form->year(...), month(...), day(...) etc.
