As long as you can connect to the WP database, I don't see why this would be that hard. Just set it up as a separate database connection, set up some models and you're good.

It really depends on how crazy you want to get. For example, do you want to form relationships that get the meta info, taxonomy, etc? If so, it's not impossible but will take some thought because WP doesn't use Cake conventions. Cake is plenty flexible enough to handle it, though.
