So which of those two steps are you struggling with?
Creating a link with an image is not difficult (either wrap an image in an a tag or preferrably use CSS image replacement).
The only slightly difficult part in the controller/action is working out a date for yesterday and Dave Milson gave you a pointer on that one. I use a combination of date() and strtotime().
If you are going to let the user go back and forth multiple days you are going to have to pass the currently indexed date to the controller/action but other than that it's all pretty simple stuff and very little of it CakePHP specific.
