Just for the record I managed to get rid of this error.
I found out that even if the relation was defined as hasMany, in the working case it was treated as hasOne, saving normally. Changing whatever code, either the validation or the controller, triggered the ->getAssociations() to identify it as hasMany, thus failing. While how it worked before still puzzles me, sadly I've lost so much time I didn't want to dig further, but changing the relation to hasOne in the model definition solved my issue.
